Many restaurants in the city have the option to cook the meat in a hoagie, on a charcoal grill, or to give it a smoke flavor in other ways (like smok gan). That’s fine, but we don’t think it’s enough. So, in creating the flavor of a charcoal-cooked steak, we created a visual image of charcoal from the meat itself. And we added burnt rosemary as an accompaniment. But we did not stop there. There was obviously something missing. And many people must have guessed by now that it was sound. In this case, the crackling of logs would be appropriate. The food attracts attention, and the concept itself doesn’t allow for mistakes. And of course, we do our best to avoid this.
